Ingredients

To create these nutrient-packed matcha energy balls you'll need:

  • 100g of raw cashews
  • 40g of raw shelled pistachios
  • 12 pitted Medjool dates
  • 15g of unsweetened shredded coconut
  • 4 teaspoons of Matcha Flow
  • 1 tablespoon of coconut oil (melted)
  • 25g of roughly chopped pistachios

Instructions

Follow these steps to create our delicious matcha energy balls. This recipe is simple and rewarding, providing a nutrient-packed snack that's ready in no time:

  1. Place the cashews, pistachios, Medjool dates, shredded coconut, matcha and coconut oil (everything except the chopped pistachios) into your blender. Make sure the lid is tightly sealed!
  2. Now blitz for one minute, until all the ingredients are finely chopped and blended.
  3. If the mixture feels too try to mould into a ball, add a tablespoon of water and briefly blend to mix in.
  4. When you're happy that the mixture feels like a sticky dough, use your medium cookie scoop to scoop out the mixture, and roll each one into a ball. Aim for evenly sized ones.
  5. Now roll each ball through the chopped pistachios, firmly enough so they attach to the dough, but gently enough to keep the ball shape.
  6. Pop each ball onto the tray (or dish), and place them in the fridge to firm them up.
  7. After 15 minutes, remove from the fridge, and indulge in these gorgeous little nuggets of goodness!

To keep the matcha energy balls fresh and delicious, always store them in an airtight container. You can keep them in the fridge for up to one week. If you think they’re getting a bit sticky during this time, dust them with a little extra shredded coconut to keep them in good shape.

Freezing Instructions

To freeze the energy balls and keep them for even longer, firstly place them on a baking sheet lined with parchment paper and initially freeze them for about two hours. Once they've firmed up, move them to a freezer-safe bag or an airtight container.

Do this, and they can stay fresh for up to three months. Just thaw them in the fridge overnight before consuming.
